Peanut Butter Mocha

4 Tbps. Dark chocolate, chopped, divided
½ c. peanuts, chopped
2 shots of espresso
1 cup of milk
2 tbsp. peanut butter


Melt and temper 3 Tbsp. of the chocolate – instructions here — and place it in a shallow dish just wider than the mouth of your mug. Place the peanuts on a larger plate. Dip the rim of the mug into the chocolate, then pip and roll it in the peanuts. Set aside and allow the chocolate to set.
Brew espresso using recommended directions for your machine. Steam the milk using the steaming wand attachment. Pour the espresso into your mug. Add the remaining tablespoon of chopped chocolate and the peanut butter and stir until the chocolate is melted and the peanut butter incorporated. Pour in the steamed milk, carefully spooning the steamed milk on top.
(If you don’t have an espresso machine, use strong brewed coffee, heat the milk in the microwave and replace the foam with whipped cream.)
