Peanut Butter Ganache

One of my favorite candies is peanut butter cups. So when we decided to do filled bon bons ourselves, the first filling on my list was peanut butter ganache. This was really easy to make, and was sweet enough to be a good foil for dark chocolate. Natural peanut butter has a layer of oil on the top, so be careful opening it, and take the time to stir to incorporate.

9 ounces white chocolate
1 1/3 cup smooth natural peanut butter
2/3 cup whipping cream

Chop the white chocolate into pieces and place in a large bowl. Add the peanut butter.

Pour the cream into a small saucepan and bring to a simmer over medium heat, stirring occasionally. Do not allow to boil. Remove from the heat and pour over chocolate peanut butter mixer. Let stand for 3 minutes, them stir or whisk until smooth.

Allow to cool completely before using to fill chocolate bonbons.
