Fruit Fudge

3 c. dates, pits removed, roughly chopped
½ c. dried apricots, roughly chopped
½ c. dried cherries, roughly chopped
2 tablespoons ghee
¼ c. cocoa powder
¼ cup pistachios, chopped
¼ cup cashews, chopped
Butter, for greasing

Place the trivet in an Instant Pot. Add 1 cup of water to the bottom of the instant pot.

Place the dates, apricots and cherries into an oven-safe bowl. Dot the top of the fruit with the ghee. Place the bowl on the trivet in the Instant Pot. Process on high for 15 minutes, according to manufacturers instructions.

Carefully remove the bowl from the pressure cooker. Transfer the fruit to the cup of a blender. Process until smooth.

Grease the bottom and sides of a 7”x9” pan. Pour the fudge into the prepared pan and smooth out the top. Place in the refrigerator for 2 hours or until firm. Cut into squares.
